Our 2008 Saralee's Vineyard Viognier is similar in style to our Roussanne in that it juxtaposes the rich, luxurious elements of Viognier with refeshing acidity. This creates a beautifully balanced wine as opposed to a rich and cloying one. Each year, our goal is to pick our Viognier at just the point when the lovely flavors of apricot, honeysuckle, and orange blossom appear in the vineyard, and to capture these elements as quickly as we can before the natural acidity in the fruit diminishes too far. Following the traditions of the Rhône, we fermented this wine in individual barrels and aged it sur lies in neutral French oak for eight months to develop further complexity.
Dreamy aromas of lychee and exotic fruits tango with floral notes of orange blossom and honeysuckle. On the palate, this wine balances a silky, glycerin mouthfeel with invigorating acidity. Notes of tangerine, tropical fruits, and lemon tea create a harmony on the palate finishing with just a hint of clove. The lavish aromas of Viognier can be difficult to pair with food, but paradoxically they also can be fantastic with some foods not so easy to pair with wines. Representative food pairings: many Asian dishes with hot spices, Polynesian dishes combining fruit with pork or seafood, or curries.
